MIXED HAKKA NOODLES

This is actually my favorite chinese noodle dish, a perfect recipe for a lazy day in kitchen. Definitely very simple recipe, packed with vegetables, eggs, chicken and shrimp - one pot meal. You can stir fry it with different ingredients as per your taste. I put which are available with me. You may add shredded carrot and bell peppers that also goes very well. Soya sauce and ajinomoto both are salty, so add little salt and which works nicely. A healthy and luscious fast food, can be made anytime at home.
INGREDIENTS:
4 OZ Egg Noodles
3 tbsps Sesame Oil
1/2 medium sized Onion (thinly sliced)
1 pod of Garlic (minced)
1/2 cup thinly shredded Cabbage
1 Scrambled Egg
8 small sized cooked Shrimp
3/4 cup shredded cooked Chicken
2 tbsps Light Soya Sauce
1 tbsp Oyster Sauce
1/3 tsp Garlic Pepper
1/3 tsp coarsely pounded Black Pepper powder
3-4 sprigs of green onion (finely chopped)
A pinch of Ajinomoto
Salt to taste
METHOD:
Heat water in a sauce pan. Bring water to boil. Add egg noodles in it. Cook till noodles are tender. Drain and rinse noodle on cold water. Lay down on a flat tray. Sprinkle 1 tbsp sesame oil on it and toss noodles nicely, this is for prevention of stickiness of noodles. Keep aside.

Heat remaining oil in a pan. Add chicken and shrimp in it. Fry for 2 minutes, remove from pan and set aside.
Add minced garlic in the same oil, followed by onions. When onion get translucent, add cabbage, fry for 3 minutes on medium high heat. Now add scrambled egg, shrimps, chicken, ajinomoto, garlic pepper, black pepper in it. Fry for another 2 minutes.

Now add egg noodles, soya sauce, oyster sauce and little salt in it. Toss everything on high flame for 2-3 minutes. Fold nicely. Remove from heat.
Serve hot. Garnish with chopped green onions on the top.

EGG CHOWMEIN

My mom usually made this with full of veggies or veg-egg mixed chowmein for my lunch box in  my school & college days. Since those days till today it is my favourite dish. Once in a week I made this egg chowmein for my family. Its really easy and helps you to clear your refrigerator of all kinds of leftovers. Cooking and eating this delicious chowmein again is trully nostalgic. I have used veggies had in hand, may use any veggies of your choice. Just stir fried all the veggies and added chowmein flavored with different sauces. Don't over cook veggies. Veggies should not be soft and mushy, it should be crunchy. So here is my adorable egg chowmein:


INGREDIENTS:
200 gm Egg Noodles
2 Eggs
2 Cloves of Garlic (chopped)
1 Medium Carrot
1 Red Bell Pepper / Capsicum
1 Large Onion
2 tbsps Sesame Oil
2 tbsps White Oil
1&1/2 tbsps Soya Sauce
2 tsp While Vinegar
2 tbsps Tomato Chilli Sauce
MSG as per taste (Ajinomoto)

METHOD:

Boil 4 cups of water. Add salt and 1/2 tbsp white oil in it.

Add egg noodles in this warm water.

Leave it for 5 minutes and drain it.

Leave it for drying. Add remaining 1/2 tbsp white oil and grease it, so that it will not becoming sticky.

Beat the eggs.  Heat 1 tbsp white oil in a pan and cook egg till it gets scrambled.

Heat 2 tbsps sesame oil for 2 minutes in a pan or wok. Add chopped garlic and then onions in it. Fry for 2 minutes on high heat. Add carrot and bell pepper now and fry for another 2 minutes minutes on medium heat.

Add noodles. Fold well. 

Mix scrambled eggs with it.

Pour soya sauce, tomato chilli sauce, vinegar and ajinomoto with it. Fold nicely.

Keep stirring for another 2 minutes. Remove from heat now.

Serve immediately with any soup or chinese gravy dish.

VEGETABLE HAKKA NOODLES

Prepare the 'veg hakka noodles' at home is very easy and simple, though it looks every elaborate. I like the smoky flavour, when I toss the vegetables. This is one of my favourite menu, because my mom prepared noodles with lots of veggies and I seldom carried it with my lunch box in school or college days.  It is a whole some meal, can be relished by everyone and kids also love it. Sometimes attractive presentation and appearance do act as a main catalyst. Thin sliced veggies gives a nice texture to the noodles.
INGREDIENTS:
100 gm Noodles
2 Shallots (thinly sliced)
1 tbsp Chopped Green onions
4 Green Beans (chopped)
3 florets of Cauliflower, cut in small pieces.
2 tbsps thinly sliced Carrot
1/4 Green Bell Peppers, cut in small cubes
1 tbsp thinly sliced Cabbage
Handful of Green Peas
1 pod of Garlic (chopped)
1/2 tsp Garlic Pepper
1 Maggie cube (crushed)
1 tbsps dark Soya Sauce
1 tsp Oyster Sauce
1/3 tsp Ajinomoto
2 tbsps Olive Oil + 1 tsp Olive Oil
METHOD:
Heat 4 cups of water in a pan. When water starts to boil, add noodles, 1 tsp oil and pinch of salt in it. Cook for 3-4 minutes, don't overcook it. Drain water and pour cold water in it. Drain all excess water, so that the noodles will not be sticky. Set  aside.

Heat 2 tbsps oil in a non-stick pan. Add chopped garlic in it. Saute for 30-40 seconds. Now add sliced shallot, green beans, carrot, cabbage, green bell pepper, cauliflower and green peas in it. Fry for 4 minutes on high.

Add soya sauce, oyster sauce in it. Fry for another a minute. Now add cooked noodles, ajinomoto, garlic pepper, Maggi crushed cube in it. Fold well. Now add green onion and mix well. Fry for another 2-3 minutes.
Serve hot with manchurian or as such with sauce.
