VANILLA CHOCOLATE CHIPS ROSE CUPCAKES - MY GUEST POST ON MANJU'Z KITCHEN

A few days back, my friend Manju Modiyani, a wonderful food blogger and author of Manju'z Kitchen had contacted me to do a guest post for her blog. I accepted her request and the first thing which popped into my mind, as this is a very first guest post on her space, so why not I start with a sweet / dessert, which will be very simple, yet yummilicious, favorite to each and everyone from kid's to adult.

The recipe I shared today is a very simple and easy to make, but quite satisfies our taste buds. It is "VANILLA CHOCOLATE CHIPS ROSE CUPCAKES", an exceptional yummy dessert loved by all chocolate lovers. Thank you so much Manju, for giving me such opportunity. Today I really honoured by you dear.

VANILLA CHOCOLATE CHIPS MUFFINS & CELEBRATING 300th POST

Hellow Friends,
When I started this blog, never dreamed of reaching 300th post. Today I am so happy and excited. Very special thanks to each and everyone who visit my space and who always supported and encouraged me through their valuable comments and showering awards on me........thank you a ton my dear friends. So my today's recipe, a quick snack, full of chocolate that is very easy to make and these chocolate chips muffins are truly a dream of chocolate lover's. 

INGREDIENTS (For Making 12 nos Medium Sized Muffins):
2 Cups Flour / APF
1 Cup Chocolate Chips
1/2 tsp Salt
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Cinnamon Powder
2 eggs
1/2 Cup Milk
1/4 Cup Melted Butter
2 tbsps Plain Yogurt
1/2 tsp Vanilla Extract
1/2 Cup Brown Sugar
1/2 Cup Regular Sugar

METHOD:
Sieve flour, salt, baking powder, baking soda and cinnamon powder.

Mix 2-3 tbsps flour with chocolate chips very nicely. (So that while it will bake, chocolate chips will not go to the bottom of muffins) Set aside.

Take a large bowl, combine eggs, brown sugar, regular sugar, milk, melted butter, plain yogurt and vanilla extract in it. Blend it nicely with hand blender.

Slowly add flour mixture in it. Fold it well.

Now add flour mixed chocolate chips in it. Fold well again.

Preheat oven to 350 F or 180 C. Arrange cupcake liners on a muffin tray. 

Take an ice-cream scoop. Pour a scoop full mixture to each cup cake liner. 

Now bake it for 20-22 minutes, till a toothpick plunged into it and comes out clean. Stand in pan for 5 minutes.

Turn out onto on a wire rack to cool and serve warm or completely cooled.

CREAMY MANGO

During the Summer days, tropical fruits are abundance. But these days mangoes are going out of season. Why not take advantage of the low prices and ripe mangoes produced by making a simple but delicious dessert for everyone to enjoy? The combination of mango with cream is just amazing! This dessert is very simple and easy, yet very luscious with regular cream. So, check out this 'creamy mango' recipe today..



INGREDIENTS:
1 Cup Fresh Mango Pulp (preferably use alphonso mango for good taste and colour)

1 Cup Whisked Fresh Cream (I used 'Amul' brand fresh cream)

1/4 tsp Green Cardamom Powder
1/3 Cup Sugar (optional/as per taste)
Few Cherries for Garnishing

METHOD:
Blend mango pulp with green cardamom powder and sugar to make a smooth puree.
Take 4 ice-cream cups. Pour 2 tbsps of mango puree into each cup.

Add 2 tbsps of fresh cream on puree.

Pour a tbsp full mango puree on the top, followed by little cream.

Garnish each cup with a fresh cherry on the top. Refrigerate for minimum 2 hours before served.
SERVES: 4


TIPS: May use plain and thick yogurt instead of cream. Milk cream can be easily replaced by coconut cream too. Also you can mix seasonal fruits, such as berries for this yummy dessert.

NAN KHATAI - AN EGGLESS COOKIE

'Nan Khatai' is nothing but eggless cookie, very famous in India and Pakistan. Cute looking short bread cookies are melt-in-mouth. They are very rich, crispy and buttery. These nan khatais are absolute delight with a cup of piping hot tea or coffee. The cookies are really simple, easy to bake and perfect in taste. So lets get started....

INGREDIENTS:
1 Cup All Purpose Flour / Wheat Flour
2 tbsps Corn Starch (optional)
1/2 Cup / 115 gm Unsalted Butter, at room temperature (or clarified butter)
1/2 Cup Confectioners Sugar (or powdered sugar)
1/4 tsp Baking Soda
1/2 tsp Cardamom Powder
1/8 tsp Salt
Few Almonds & Pistachios, chopped (for garnishing)

METHOD:

Mix confectioners sugar with butter.

Mix butter and sugar with a spoon, until light and fluffy. It takes approximately 1&1/2 minutes.


Sieve all purpose flour with baking soda. Mix salt in it. Now pour flour, salt and baking soda into the butter-sugar mixture.

Add 1/2 tsp cardamom powder in it.

Beat it again till it incorporated well. First the mixture would resemble bread crumbs.

Slowly knead it in a smooth dough.


Make small gooseberry sized balls (I made 24 nos.) and make sure balls don't have any crack on their outer surface. Place the balls on a alluminium foil lined tray with space of 2" apart. Put some horizontal mark on each ball with the tip of your knife.
Press them down with pistachios and almonds slices on the top and flatten them very slightly.


Preheat oven to 170 C / 325 F for 10 minutes. Place the baking tray at the center of the oven. Bake for 18 minutes. Remove it from the oven, let it cool down for 5 minutes on the cookie tray.

Now remove them on a cooling rack and let them cool completely.

Then store them in air-tight container.

Serve it with a cup of tea or coffee and enjoy it anytime!!!

LITCHI COOKIE DESSERT


Today, I come here with a very simple dessert which I made with only 3 ingredients. Litchi is a sole member of soapberry family, is a very favourite to me in any form. It is a fragranced fruit with a very sweet in taste. I mix-matched litchi juice with butter cookie crumbs; within 3 minutes it came out to a yummilicious dessert. I had nothing in my pantry except few fresh cherries for garnishing of this dish. It gave a very nice look and the end product is really very luscious. I think tutti frutti will also go good with this dessert. So friends, here is the super delicious very easy to make dessert, tryout and enjoy!

INGREDIENTS:
2 Cups Butter Cookie Crumb
150 ml Litchi Juice
Few Chopped Fresh Cherries for Garnishing
Serves: 4

METHOD:

Heat the litchi juice till just lukewarm in a thick-bottom pan.
Slowly, mix in the cookie crumbs and vanilla essence, stirring continuously so that it does not stick to the bottom of the pan. The mixture should take only 3 minutes time to thicken.

Put off the heat now. Pour the mixture into differently shaped moulds. Bring to the room temperature.

Keep in the refrigerator for an hour. Unmould from the container or bowls. Spread chopped cherries on the top. Serve as a dessert.
