MIXED HAKKA NOODLES

This is actually my favorite chinese noodle dish, a perfect recipe for a lazy day in kitchen. Definitely very simple recipe, packed with vegetables, eggs, chicken and shrimp - one pot meal. You can stir fry it with different ingredients as per your taste. I put which are available with me. You may add shredded carrot and bell peppers that also goes very well. Soya sauce and ajinomoto both are salty, so add little salt and which works nicely. A healthy and luscious fast food, can be made anytime at home.
INGREDIENTS:
4 OZ Egg Noodles
3 tbsps Sesame Oil
1/2 medium sized Onion (thinly sliced)
1 pod of Garlic (minced)
1/2 cup thinly shredded Cabbage
1 Scrambled Egg
8 small sized cooked Shrimp
3/4 cup shredded cooked Chicken
2 tbsps Light Soya Sauce
1 tbsp Oyster Sauce
1/3 tsp Garlic Pepper
1/3 tsp coarsely pounded Black Pepper powder
3-4 sprigs of green onion (finely chopped)
A pinch of Ajinomoto
Salt to taste
METHOD:
Heat water in a sauce pan. Bring water to boil. Add egg noodles in it. Cook till noodles are tender. Drain and rinse noodle on cold water. Lay down on a flat tray. Sprinkle 1 tbsp sesame oil on it and toss noodles nicely, this is for prevention of stickiness of noodles. Keep aside.

Heat remaining oil in a pan. Add chicken and shrimp in it. Fry for 2 minutes, remove from pan and set aside.
Add minced garlic in the same oil, followed by onions. When onion get translucent, add cabbage, fry for 3 minutes on medium high heat. Now add scrambled egg, shrimps, chicken, ajinomoto, garlic pepper, black pepper in it. Fry for another 2 minutes.

Now add egg noodles, soya sauce, oyster sauce and little salt in it. Toss everything on high flame for 2-3 minutes. Fold nicely. Remove from heat.
Serve hot. Garnish with chopped green onions on the top.

GALDA CHINGRI BHAPE (STEAMED SCAMPI / TIGER PRAWNS) - A MICROWAVE VERSION

"Galda Chingri Bhape" is an authentic Bengali Recipe, which is prepared in every household since ages. It goes best with warm steamed rice, but some people serve it with pulao too. Pungent taste of mustard paste with mustard oil makes it more appealing. Soft meat of this scampi has a very distinct flavour if cooked perfectly, little sweet in taste, it is just mouth-melting!

INGREDIENTS:
1&1/2 kgs Indian Scampi / Tiger Prawns (galda chingri)
3/4 Cup Plain Yogurt (thick curd)
1&1/2 tsps Turmeric Powder
2 tsp Green Chillies Paste
6-8 Green Chillies (or as per taste), cut in slits
1/2 Cup Grated Coconut
3 tbsps Poppy Seeds Paste
6 tbsps Mustard Paste
6-8 tbsps Mustard Oil
Salt to taste

METHOD:
Clean and wash the tiger prawns. In a microwave safe bowl, marinate prawns with turmeric powder and salt. Keep aside for 15-30 minutes.

Add mustard paste, green chilli paste, poppy seeds paste, coconut and salt to the prawn mix. Now add yogurt and mustards oil in it. Mix it well. Arrange green chillies on the top.

Place the bowl in microwave. Micro at 100% MW power for 5 minutes.

Take out the bowl from the oven now, turn the prawns in the bowl to expose other sides. Adjust salt. Microwave for another 5 minutes at 100% MW power. Switch off the oven, keep it on stand time for 5 minutes more.

Serve hot with plain rice or pulao, its yummilicious!!!

PRAWN CHA-CHADI


It is a day to day Bengali prawn curry in simple way. Last week I saw this delectable Bengali dish at COOKING AND RECIPES and decided to cook it like Ushnish da. I think everyone who is related with cooking blogosphere (Indian) is surely known about Ushnish Ghosh. He cooks everyday wonderful recipes in his Delhi kitchen for our 'BOUDI' (his wife). He is not only a great chef, but he has extreme knowledge regarding any food matter. I admire his enthuism and passion for cooking. So, today I dedicate my easy and simple but toothsome prawn recipe to USHNISH DA. I made little variation in this recipe, though I can't have much spicy, so I added spice less. If you like, may add more green chilli and red chilli powder. Adding coriander leaves in it, is my choice, and it added more flavor and aroma to this luscious dish. 


INGREDIENTS:
0.5 lb / 200 gm dressed and cleaned shrimps
1 Large Potato
1 Medium Onion
1 tsp Turmeric powder
1/2 tsp Red Chilli powder (according to taste)
1 tsp Kashmiri Chilli powder
2-3 Green Chillies (optional, if like enough hot)
3-4 tbsps Mustard Oil
1 tsp fresh Lemon juice
1 tbsp chopped Coriander Leaves
Salt to taste

FOR TEMPERING:
1/3 tsp Nigella seeds (kalonji)
5-6 freshly crushed black peppercorns
3 Green Chillies, cut in slits

METHOD:
Marinate shrimps with salt and 1/2 tsp turmeric powder. Cut potato in thin long pieces. Cut onion into thin slices. Keep aside.
Heat oil in a wok. Add all ingredients for tempering. Saute till green chilli changes its colour.
Following that add onions in it. Fry till the onion turns translucent.
Add sliced potato now and fry for 2 minutes.
Now add 1/2 tsp turmeric powder, red chilli powder and kashmiri chilli powder in it. Fry for another 2 minutes.
Add 3/4 cup water in it. Mix well. Cover and cook for 5 minutes on medium heat.
At this time add shrimps in it. Fold nicely. Cover and cook for another 3 minutes on high heat. Add green chillies now. The mixture almost dry within 3-4 minutes. Don't overcook, then shrimps will becoming chewy and and little hard.

Add Coriander leaves and lemon juice in it, fold nicely again. Remove from heat.

Serve immediately with piping hot steamed rice.

May prepare this luscious dish within 20 minutes only. Enjoy your lunch table with this toothsome Bengali delicacy.

PRAWN IN POPPY PASTE (CHINGRI POSTO)


It is very simple and quick to make. A spiced shrimp curry with amazing distinctive flavor of poppy seeds and mustards seeds paste combination. Today I tried to make a shrimp curry in some different manner, which will be unique and a delicious Bengali delicacy. I should say mustard oil, indeed imparts special flavors and gives a unique flavor in Bengali cuisine. Who never used mustard oil, do try this curry, you just love it.

INGREDIENTS:
400 gm Medium Shrimp (prawns)
1/2 tsp Turmeric powder
3 tbsps Poppy seeds paste
1 tsp Green Chilli paste
3-4 Green Chillies, cut in slits
1 tbsp Mustard paste
1/4 cup Mustard Oil
Salt to taste

METHOD:
Clean, de-vain and wash shrimp. Add turmeric powder and salt in it. Mix nicely.

Take a medium sized bowl. Combine poppy seeds paste, green chilli paste, mustard paste, mustard oil, green chillies and salt with shrimp. Set aside.

Heat a wok and add shrimp mixture. Cover and steam for 15 minutes on medium heat. (Or combine all ingredients in microoven safe bowl and micro it for 12-15 minutes on 100% power. Stir twice after every 5 minutes.) Switch off heat now.

Serve hot with steamed basmati rice or any plain rice only.....enjoy this toothsome yummy shrimp curry!

FISH CAKE


These Fish Cakes bring back memories of a big gathering at my home, a great non-vegetarian appetizer. With the addition of Indian spices, these fish cakes were really something special. A chilled winter evening can be easilly relished with these delicious luscious fish cakes and a mug of pipping hot coffee. Enjoy!

INGREDIENTS:
15 OZ can of Tuna Fish (may use Salmon / Macherel / Cod / Bhetki too)
1 tbsp Butter
1/4 tsp Black Pepper powder
2 Cloves Garlic (crushed)
2 Medium sized Potatoes (Parboiled)
2 tbsps Chickpea Flour (Besan)
1 Medium Sized Onion (finely chopped)
1" Ginger (minced)
2 tbsps finely chopped Cilantro / Parshley Leaves
1/2 tsp Chaat Masala
1 tbsp Lime Juice (fresh)
1/2 tsp Roasted Cumin seeds powder
1/2 tsp Garam Masala
1-2 Green Chillies (chopped)
1/2 tsp Red Chilli powder
1/2 Cup Bread Crumb
Salt to taste
Canola Oil for frying
METHOD:
Heat butter in a pan. Add cushed garlic in it. Saute for 30 seconds, add drained tuna fish now.
Sprinkle black pepper powder and little salt in it. Fry for 3-4 minutes on medium heat. Set it aside.
Mash parboiled potatoes in a large bowl.
Combine fish, chickpea flour, onion, ginger, green chillies, cilantro, chaat masala, lime juice, roasted cumin seeds powder, garam masala, green chillies, red chilli powder and salt with the mashed potatoes now.
Using by hand, mix up nicely so that there should not be any lump.
Take a ball (small amount) from the dough, give it a flat oval shape by using two palms. Roll on bread crumb. Keep aside. Follow the same process to make all fish cakes.
Heat canola oil in a deep fry pan. Fry 3-4 fish cakes at a time. Fry till it turns golden brown. Remove from oil by a slotted spoon and drain on a kitchen paper towel to absorb the excess oil. Fry all cakes following the same process.
Serve hot with chilli garlic sauce.

KOLAMBI BHAAT - KONKANI PRAWN RICE

Kolambi bhaat is an easy and simple recipe but tastes divine. When I was in Pune, I tasted this awesome rice recipe several times, not only very delightful but very flavourful too. The main flavour comes from prawns, coconut, mint leaves, coriander leaves and star anise definitely added a lovely aroma as well as appetizing and palatable.

INGREDIENTS:
2 Cups Basmati Rice
42-45 nos medium sized Prawns (washed and cleaned)
2 medium sized Onions (finely chopped)
1&1/2 tbsps Lemon Juice
3/4 cup Shredded Coconut
3-4 Green Chillies
6-7 pods of Garlic
1&1/2" Ginger
1/2 cup Chopped Cilantro (coriander leaves)
12-15 nos. Mint Leaves
1 tsp Cumin seeds
3-4 Cloves
4-5 Cardamoms
1" Cinnamon
1 Star Anise
3 cups + 3 tbsps water
1 cup Coconut Milk
4 tbsps Oil
Salt to taste

METHOD:
Marinate prawns with little salt and lemon juice. Keep aside for 30 minutes.

Wash rice and soak it in enough water for 30 minutes, then drain water and keep rice aside.

Grind shredded coconut, green chillies, Garlic, ginger, mint leaves and cilantro with 3 tbsps water. Make a smooth paste. Set aside.

Heat oil in a deep frying pan. Add cumin seeds, cloves, cinnamon, cardamoms and star anise in it. Saute for 30-40 seconds, till nice aroma comes out. Add onions in it. Fry till onion turns into golden brown.

Now add marinated prawns in it. Saute for 2-3 minutes.

Add pounded paste in it. Mix nicely. Fry till spices leave oil from the side of the pan.

Add rice in it. Fold nicely, so that spices coat well on rice.

Now add 3 cups hot water, 1 cup coconut milk and salt in it. Mix Nicely.

When it starts boiling, lower the heat and cover and cook for exactly 15 minutes. Switch off the heat.

Serve hot with any spicy fish curry or chicken curry or just plain raita.
